Prepare the sauce and season the chicken

In a bowl, whisk together the soy sauce, hoisin sauce, ketchup, apple juice, water, apple cider vinegar, light brown sugar, grated ginger, and garlic. Set aside.

Season the chicken thighs with garlic powder, onion powder, paprika, and black pepper, making sure to cover every part.

Brown the chicken

Add the chicken to a skillet with a tablespoon of oil and brown both sides. It does not need to be cooked through at this point. Remove and let rest.

Add the sauce to the pan and scrape up any fond. Let it reduce by half before adding the cornstarch slurry.

Finish and simmer

Add the chicken back in and let it all simmer until it comes up to temperature.
